okay so currently as far as "adrien and/or felix is a sentimonster" theories go, I lean more towards them recently becoming sentimonsters (like... a year before the events of the show started when both Emilie and Felix's dad died), but if they HAVE been sentimonsters since birth, I uh.. did this

Headcanon: Gabriel has to try very, very hard not to ask Nathalie to marry him within *days* of them getting together, because being with her feels so natural. Then he doesn't marry her for years because he literally forgets she's not his wife already.

He also most definitely refers to her as his wife well before they marry, because that's the only word that sounds right to him. Eventually Nathalie does have to point out that they should probably make that official (she's also been calling him her husband).
