Why spicy is not a taste

Tate buds are a special sense structures that can detect five categories of flavor: sweet, salty, sour, bitter, and umami (savory). Spice is not detected by these receptors, and instead, is picked up by nociceptors (pain receptors). Our brain can interpret that pain as a taste: spicy. But, since it is not detected by true taste receptors, it is not counted as one of the five flavors. This is also why pain tolerance is related to spice tolerance. And, as a fun fact, this means that any nerve receptor on a mucosal surface can "taste" spicy (eye, nose, genital, and anal mucosa are all included here). Have fun with that last fact, lol.
